Apple Brownies

• 3 eggs

• 1 ¾ cup sugar

• 1 cup canola oil

• 1 tsp vanilla

• 2 cups flour

• 1 tsp cinnamon

• 1 tsp baking powder

• ½ tsp salt

• 2 cups apples thinly chopped

• Walnuts and sanding sugar for topping (optional)


Cream together eggs and sugar until fluffy. Add oil and vanilla. In a separate bowl, whisk together flour, cinnamon, baking powder, salt. Slowly mix together by hand dry and wet ingredients. Fold in apples. Grease a 9×13 pan, add batter then let rise 5 to 10 minutes before baking. Top with Walnuts and sanding sugar. Bake at 350° degrees for approx. 40-45 minutes. Check with knife.
