Blueberry Cake

Preheat oven 350 degrees. Grease and flour 9”x13” pan. Use baking spray if you like.


• 2 eggs separated

• 1 c sugar

• 1/4 tsp salt

• 1/2 c shortening

• 1 tsp vanilla

• 1-1/2 c flour

• 1 tsp baking powder

• 1/3 c milk

• 1-1/2 c. blueberries


Powder the blueberries with a tablespoon or so of flour.


Beat egg whites ( dd 1/4c sugar) til stiff and set aside. 


Cream shortening, salt, vanilla and remaining sugar, gradually. 


Add unbeaten egg yolks. Beat until light and creamy.


Add sifted dry ingredients alternating with milk.


Fold in beaten egg whites. 


Then add powdered blueberries, gently folding them in. 


Pour into cake pan and sprinkle entire top with sugar before cooking for approx 45 minutes. Check with toothpick and cook longer if need be.
