• 3/4 cup unseasoned mashed potatoes 

• 1/2 tsp. salt

• 2 (1 lb.) packages confectioners’ sugar

• 1/2 cup melted butter

• 2 (7 oz.) bags flaked coconut

• 2 tsp. vanilla

• 1 (12 oz.) package chocolate chips

• 4 unsweetened chocolate squares

• 1/2 paraffin was block (2-1/2” by 2-1/2”)


Add salt, butter, sugar, coconut and vanilla to potatoes. Mix well and turn into a buttered jelly roll pan and spread evenly. Place in a cool place to harden. When hardened, cut into small squares. Place paraffin in double boiler over boiling water to melt. Add two kinds of chocolate and allow to melt. Stir well to mix ingredients. Dip squares into chocolate mixture with a fork, allow excess to drip off, and place on waxed paper to harden.
