- 2–3 boneless, skinless chicken breasts (1 pound), diced
- 1 medium onion
- 3 cloves garlic
- 2 carrots
- 2 stalks celery
- 4 cups low-sodium chicken broth, room temperature
- 1 tsp dried thyme
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil, extra virgin preferred
Prep: Dice chicken, chop vegetables, mince garlic (15 minutes – uniform pieces cook evenly)
Sauté: Heat oil, cook onions, carrots, celery until softened (5 minutes – medium heat prevents burning)
Cook Protein: Add chicken, season, brown on all sides (5 minutes – don’t overcrowd the pot)
Simmer: Add garlic, thyme, broth; bring to boil then reduce heat (20-30 minutes – gentle bubbling melds flavors)
