Amish Snow Day Soup

  • 2–3 boneless, skinless chicken breasts (1 pound), diced
  • 1 medium onion
  • 3 cloves garlic
  • 2 carrots
  • 2 stalks celery
  • 4 cups low-sodium chicken broth, room temperature
  • 1 tsp dried thyme
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil, extra virgin preferred


Prep: Dice chicken, chop vegetables, mince garlic (15 minutes – uniform pieces cook evenly)


Sauté: Heat oil, cook onions, carrots, celery until softened (5 minutes – medium heat prevents burning)


Cook Protein: Add chicken, season, brown on all sides (5 minutes – don’t overcrowd the pot)


Simmer: Add garlic, thyme, broth; bring to boil then reduce heat (20-30 minutes – gentle bubbling melds flavors)


Finish: Taste, adjust seasoning, ladle into bowls (2 minutes – let cool slightly before serving)
