Cowboy Cookies

- 2 sticks margarine
- 1 cup granulated sugar
- 1 cup brown sugar, firmly packed
- 1 tsp. vanilla
- 2 eggs
- 2 cups sifted flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 cups uncooked oatmeal
- 1 cup chocolate bits or raisins
Cream shortening and vanilla, add sugars gradually, beat until smooth and creamy. Add eggs one at a time, beating well after each addition. Beat until light and creamy.
Sift dry ingredients together. Add flour mixture to creamed mixture. Stir in the uncooked oatmeal – this will be a crumbly mixture. Fold in chocolate bits or raisins. Drop by teaspoonfuls onto greased cookie sheets. Bake at 350 for 10 to 12 minutes. Makes about 7 dozen cookies.
