John Wayne Casserole

- 2-1/2 pounds ground beef
- 1-1/2 packets taco seasoning
- 1-1/2 cans large biscuits
- 3/4 cup sour cream
- 3/4 cup mayonnaise
- 10 ounces shredded cheddar cheese, divided
- 1-1/2 medium onions, halved and sliced
- 3 medium tomatoes, sliced
- 1-1/2 red bell peppers, halved and sliced
- 1 (6 oz) can sliced jalapeño peppers
Preheat oven to 350°F. Cook ground beef until browned, drain grease, and stir in taco seasoning. Set aside. Press biscuits evenly into the bottom of a greased 13×9-inch baking dish to form the base layer. Spread seasoned beef over biscuit layer. Mix sour cream, mayo, and half the cheese. Spread over beef. Layer sliced onions, tomatoes, bell peppers, and jalapeños over the creamy mixture. Sprinkle remaining cheddar cheese on top. Bake uncovered 35-40 minutes until cheese is melted and golden, and biscuits are cooked through. Cool 5 minutes before slicing. Serve warm with extra sour cream, salsa, or fresh cilantro.
