Linekin Bay Baked Haddock
- 1 lb. Fresh Haddock
- 1 egg beaten with 1/4 cup water in a separate bowl
- 1 cup Parmesan shredded cheese
- 1 cup roughly crushed corn flakes or pre-crushed coating mix
- 1 cup Ritz crackers hand crushed but lumpy (about 1 sleeve of crackers)
Preheat oven to 350°. Mix dry ingredients together and place in a plastic bag. Add the cup of Parmesan Cheese to dry mix. Coat fish with the egg wash. Drop fish into the bag of dry mixture. Shake until completely heavily coated. Place fish onto a baking pan (use a sheet of aluminum foil under the fish for easy clean up). Baked for approximately 20 minutes depending on the thickness of the fish. Check after 15 minutes. Haddock should be flaky when done.
